At the beginning of winter, we harvest the olives from the olive trees in Atropos Land (Ermioni region-Greece) before they become ripe in order to get the highest of nutritious value in the extracted olive oil.
We enjoy it raw in salads and dishes just before we serve them, to get a richer flavor.
